Zanae's traditional Greek chicory vegetable is made from cultivated young dandelions. It is cooked very gently and thus retains its slightly tart bitterness. The chicory - also called radikia -
can be refined with lemon and a good olive oil. It is mainly used in Mediterranean meat dishes of all kinds. It tastes particularly good warm with grilled meat, or cold as an ingredient in a fresh salad.
Chicory is also appreciated in casserole dishes with light sauces.
