The Recipe (for 2 people)

Ingredients:

    250g fresh spinach (washed)

    150g long-grain or medium-grain rice

    1 small onion, finely diced

    2 spring onions, sliced

    1 tbsp tomato paste (optional for depth)

    500ml vegetable broth

    4 tbsp Repa Mediterran Olive Oil

    Juice of half a lemon

    Fresh dill (plenty), salt & pepper

    Optional: 100g feta cheese for garnish

Preparation:

    Sauté: Heat olive oil in a pot. Sauté onions and spring onions until translucent.

    Rice: Add the rice and toast for a minute until coated in oil.

    Spinach & Broth: Add spinach in batches until wilted. Pour in the broth.

    Simmer: Cook on low heat for 15–20 minutes until the rice is tender and the liquid is mostly absorbed.

    Finish: Stir in lemon juice and fresh dill. Season with salt and pepper. Let it rest for 5 minutes before serving.

Zero-Waste Tip

Don’t toss the spinach stems! Chop them finely and sauté them right at the beginning with the onions. They add a lovely crunch and extra nutrients, ensuring nothing goes to waste.
Drink Recommendation

A crisp, chilled Sauvignon Blanc or a traditional Greek Assyrtiko perfectly complements the acidity of the lemon and the herbal notes of the dill.
