Greek Bifteki: Meatballs with a Heart of Gold

400g ground meat (beef or mixed)

1 small onion (finely diced)
1 tbsp [Erotokritos Olive Oil](Link to Shop)
1 tbsp breadcrumbs (or soaked stale bread)
1 tbsp fresh parsley & a pinch of fresh mint
1 tsp [Wild Oregano (Rigani)](Link to Shop)
Salt & Pepper
Instructions:
Mix: Combine the ground meat, onions, herbs, olive oil, breadcrumbs, and spices in a bowl. Knead thoroughly.
Shape: Divide the mixture into 4 portions. Flatten each portion, place a piece of Feta in the center, and wrap the meat around it. Seal tightly to prevent the cheese from leaking.
Cook: Fry in a pan with a little olive oil or grill over medium heat for about 6 minutes per side until golden brown.
