Souvlakia Psaria (Greek Fish Skewers)
Ingredients for 2 Persons
400g firm fish fillet (e.g., swordfish, salmon, or monkfish), cut into 3cm cubes
1 red bell pepper, cut into chunks
1 small zucchini, sliced
8-10 cherry tomatoes
For the Marinade:
4 tbsp extra virgin Greek olive oil (from Repa Mediterran)
Juice of half a lemon
1 tsp dried oregano
1 garlic clove, finely minced
Salt & freshly ground pepper
Wooden or metal skewers
Instructions
Marinate: Mix olive oil, lemon juice, oregano, garlic, salt, and pepper. Marinate the fish cubes for 20–30 minutes in the fridge.
Assemble: Thread the fish cubes onto skewers, alternating with peppers, zucchini, and tomatoes.
