Souvlakia Psaria (Greek Fish Skewers)
Ingredients for 2 Persons
400g firm fish fillet (e.g., swordfish, salmon, or monkfish), cut into 3cm cubes
1 red bell pepper, cut into chunks
1 small zucchini, sliced
8-10 cherry tomatoes
For the Marinade:
4 tbsp extra virgin Greek olive oil (from Repa Mediterran)
Juice of half a lemon
1 tsp dried oregano
1 garlic clove, finely minced
Salt & freshly ground pepper
Wooden or metal skewers
Instructions
Marinate: Mix olive oil, lemon juice, oregano, garlic, salt, and pepper. Marinate the fish cubes for 20–30 minutes in the fridge.
Assemble: Thread the fish cubes onto skewers, alternating with peppers, zucchini, and tomatoes.
Grill/Sear: Heat a grill pan or outdoor grill. Cook the skewers for 6–8 minutes in total, turning occasionally until the fish is cooked through but still succulent.
Finish: Drizzle with fresh lemon juice and a pinch of extra oregano before serving.
Why is it so healthy?
High-quality lean protein combined with heart-healthy monounsaturated fats from olive oil makes this a nutritional powerhouse. It provides essential iodine and omega-3s without the heaviness of red meat.
What makes it special?
It's the ultimate Mediterranean "fast food" made elegant. The "Ladolemono" dressing enhances the natural sweetness of the fish, creating a refreshing and light dining experience.
Who is it for?
Perfect for Low-Carb and health-conscious diners, or anyone looking for a sophisticated yet simple seafood dinner.
Zero-Waste Tip
Use any vegetable offcuts that didn't fit on the skewers for a quick stir-fry side dish. If using wooden skewers, soak them in water first to prevent charring, making them easier to compost after use.
Drink Pairing
A crisp Retsina or a dry Roditis white wine perfectly complements the citrus and herbal notes of the marinade.
