Recipe for 2 People

Ingredients:

    250g Authentic Greek Yogurt (10% fat) by Repa Mediterran
    1/2 Cucumber
    2-3 cloves of Garlic (to taste)
    2 tbsp Extra Virgin Olive Oil from Crete (Repa Mediterran)
    1 tbsp Greek vinegar or a squeeze of lemon juice
    1 tsp Dried oregano or fresh dill
    A pinch of sea salt and black pepper

Preparation:

    Prepare the cucumber: Coarsely grate the cucumber. Crucial step: sprinkle with a pinch of salt, let sit for 5 mins, then squeeze out as much liquid as possible using a kitchen towel. The drier the cucumber, the creamier your tzatziki!

    Garlic: Finely mince or crush the garlic.

    Mix: Place the yogurt in a bowl. Stir in the cucumber, garlic, olive oil, and vinegar.

    Season: Add salt, pepper, and herbs to taste.

    Rest: Chill in the fridge for at least 30 minutes before serving to allow the flavors to meld.
